- Spread dhosa on a dhosa pan. Wait till the surface of it dries. Apply butter moderately on it. Spread 2 tbsp Chutney all over dhosa. Put chopped vegetables all over dhosa. Do NOT overload dhosa with vegetables as it doesn't taste nice.
- Let dhosa cook evenly on all the sides. You may have to keep moving the pan over flame. Grate cheese over it. Gently scrape the dhosa off the pan and fold. Cut into pieces. Take it out on a serving plate. Grate cheese and serve hot.
- Variation : you can replace Mysore masala chutney with mayonnaise and chilli sauce or with garlic chutney. The dhosa with mayonnaise spread comes out a bit soggy and it breaks as you scrape it.
