Instructions to make Lauki kofta:
- Let’s start making kofta.
- For that grate lauki with thick side of grater. Squeeze all the water out of it.
- In a bowl take the grated lauki. Add chopped green chilies, ginger, coriander leaves. Then add all the dry masala along with Besan and ghee.
- Mix all the ingredients well and let it sit for about 10-15 minutes.
- After 10-15 minutes heat oil in a pan on low medium heat. Once the oil gets heated up add small koftas to it. Let the kofta get brown from the bottom side then only flip it. Fry all the koftas.
- Keep fried koftas aside.
- Let’s get started with gravy. Put your tomatoes ginger garlic and chilies in a grinder and grind it together.
- In a pan take oil. Heat it up. Add chopped onions to it. Once the onions get started turning brown, add turmeric powder to it. Cook it for another few seconds.
- Then add your grinded tomatoes paste to it. Cook it till oil starts leaving the pan.
- Now add all the dry masala except Garam Masala and fenugreek leaves.
- Add little water to deglaze the pan.
- Cook the masala until oil separates.
- Now add water to get required consistency gravy. Give it a nice boil.
- Add Garam Masala powder and fenugreek leaves.
- Add koftas to it and give it nicevtwo or three boils.
- Finish it with handful coriander leaves.
- Enjoy with chapatis or Rice.
