- For green puree:- Wash all the greens then blanch the palak.
- Add blanched palak, coriander leaves, mint leaves in a blender and make smooth paste.
- For dough:- In a large bowl mix flour, salt, oil and mix well. Add green puree 1cup and mix well. Add water as required to make a smooth dough. Knead well for 3-4 minutes.
- For stuffing:- Combine all the ingredients and mix well.
- For paratha:- Divide the dough into equal parts and make small balls with the help of your palm.
- Roll them out as you do for normal roti.
- Now take a sharp knife and make cut as shown in the pic. Place 1 tbsp stuffing in the centre of the rolled out roti.
- Now alternately start wrapping it the same way we do while making a hair braid but do it with a safe hand. Give fish shape.
- Take black pepper and place it just on the top of the paratha.
- Hot non stick pan/tawa and place fish shaped patatha on it.
- Drop some ghee/butter when it gets little brown spots on one side and do the same for both sides.
- Cook till they are crisp and get golden brown colour.
- Serve hot with tomato sauce, curd or green chutney as liked.
