The ingredients needed to make Dhaba Mutton Gravy:
  1. Get 1 kg Mutton Bone-in
  2. Get 2-3 tsp Ginger garlic paste

  14. Take 1 small bunch Coriander Leaves finely chopped
  15. Make ready 2 Red Chillies dry ones
  16. Take 1/2 tsp Cumin Seeds
  17. Take 1/4 cup Oil
  18. Take WHOLE SPICES -
  19. Make ready 2 Cardamoms
  20. Get 2 Bay Leaves
  21. Make ready 2 Cinnamon sticks small
  22. Make ready 4-5 Cloves
Instructions to make Dhaba Mutton Gravy:
  1. Marinate the mutton pieces with kashmiri red chilli powder, paprika powder, half of ginger garlic paste, cumin powder, salt and yoghurt. Set aside for an hour.
  2. In a big pan, add half of oil and fry the mutton pieces for 10 minutes. Keep aside. In another pan, add rest of oil, temper cumin seeds along with whole spices - cardamoms, cloves, cinnamon stick, bay leaves and dried red chillies.
  3. Add onions and green chillies and saute till the onions turn a golden brown in colour. Add the other half of the ginger garlic paste and saute for a minute.
  4. Add coriander powder, turmeric powder and saute till oil oozes out. Add tomato puree, mutton pieces and garam masala. Mix well, add 2 cups of water and bring to a boil.
  5. Cover and cook on a medium low heat for about 40-45 minutes. Adjust to a semi thick consistency. Serve it piping hot.
