I used a bit less lime juice than the recipe calls for after reading the reviews. Also I the cilantro (plus a bit extra chopped finely) just before the rice finished cooking to allow the extra heat to increase the cilantro flavor. A stir-in of cilantro and lime juice transforms plain cooked rice into a lively side that's an ideal accompaniment for Mexican main dishes, such as Chicken Fajita Tostadas. Place the toasted rice and salt into your rice cooker.

Instructions to make Cilantro Lime Rice:
  1. Rinse Rice in a strainer. Rinse until water runs clear. In a sauce pan or pot, heat Olive Oil and Butter over Medium Heat. Add Rice. Cook, while stirring often, until Rice just starts to turn light brown. Add Lime Zest. Stir.
  2. Add 1 1/4 Cups Water or Chicken Stock. Add Salt, Bay Leaf, and Half of the Lime Juice. Stir, and Turn Heat up to Medium High. Once boiling, cover and turn heat down to Medium Low. Allow to cook for 15 Minutes.
  3. Remove Bay Leaf. Let Rice Cool for 20 Minutes or so. In the same pot or a mixing bowl, add other half of Lime Juice. Add some extra Olive Oil (optional) @ 1 Tbsp. Add Cilantro. Fold all Ingredients together.
  4. Enjoy!

Once the rice is cooked, open the rice cooker and fluff with a fork. Then transfer to a bowl and add in the cilantro, lime zest and juice. Heat the oil in a large skillet over medium heat. Reduce the heat to low and add the rice and salt. Love cilantro, lime and rice… great combination and so full of flavor.
