- In a pressure cooker,combine pork,Chilli,corriander,turmeric,vinegar,salt,chopped onions,crushed ginger & garlic & cook till done.
- Meanwhile pulse the grated coconut in the mixie twice sothat it's evenly crushed (not a paste)
- In a nonstick pan heat 1 tsp oil & add the crushed coconut & fry.when it starts to change color,add the whole spices & Saute tillyhe coconut is well browned.keep this aside.
- Open the cooker & pour the stock to a wide nonstick pan & cook till water almost dries.
- Now add the cooked pork into this & half of the fried coconut mixture to it & cook till it starts to brown.
- Add the pepper & garamasalas & the remaining browned coconut & continue frying in medium heat till nicely browned.
This is mainly popular among Christians in Central Kerala; Kottayam, Ernakulam and Thrissur regions were Pork is devoured for all special occasions. Open the lid of the pressure cooker and add the cooked pork along with any extra water that remains in it. Stir fry until the pork is well cooked and all the water evaporates.
