  1. For the potato filling, put the chopped onions in a large pan. Put enough oil to coat the onions well. Add in the garlic,mix evenly and saute them till slightly pink.
  2. In a bowl, add the diced eggplant to the diced potatoes and give them a rinse.
  3. Add in the eggplant potato mixture to the onions and stir till they evenly cook. Add in your spices, salt and pepper and stir evenly.
  4. In a bowl, prepare your dough by mixing all the dry ingredients: flour, salt and garlic powder. Make a well at the center and add in your wet ingredients: egg, water, oil and melted butter. Knead quickly but do not overknead.
