Add in ginger, garlic, green chilli, dry red chilli and fry till golden brown and crisp. Now add in soya sauce, vinegar, salt, sugar and mix well. Add some water and mix that well. Now add in the fried mushroom pieces and mix well so the sauce coats all mushroom pieces.

- In a bowl mix together all the batter ingredients. To it add the chopped mushrooms.
- Heat some oil in a pan and fry the mushrooms in batches. Once they are nice and golden brown, drain and set aside.
- Pour out most of the oil out of the pan after frying leaving about a tbsp worth. Add the ginger garlic pastes, the chile and fry.
- Next add the soy sauce, vinegar, salt and sugar. I added just a little water as well. Mix well to combine and let it cook for a couple of minutes.
- Finally add the fried mushrooms back to the pan and toss well so that the sauce covers the mushroom pieces.
- Transfer to a serving plate and garnish with some spring onion.
