  6. Get 1 tbsp. pickle masala
  7. Take 1 tbsp. oil

  11. Get 1 tsp. eno fruit salt
  12. Take Tempering -
  13. Take 2 tbsp. oil
  14. Prepare 1 tsp. mustard seeds
  15. Prepare 1 tsp. sesame seeds
  16. Prepare 2 fresh red / green chilies, slit
  17. Make ready 1 sprig curry leaves
  18. Make ready pinch asafoetida
  19. Get 2 tbsp. freshly frated coconut
  20. Take 2 tbsp. coriander leaves, chopped
Instructions to make Achari Khaman Dhokla:
  1. Sift the besan. In a bowl, mix together besan, salt, sugar, ginger-green chilies paste, pickle masala and pickle oil.
  2. Then add the yoghurt,
  3. Semolina and 1 cup water or as needed,
  4. Turmeric powder,
  5. Eno fruit salt and 1 tbsp. water.
  6. Pour into a greased steel container or plate and steam for 15-20 minutes.
  7. When cool, cut into desired shapes.
  8. Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add sesame seeds, curry leaves, asafoetida and green chilies. Saute for a few seconds and add 1/4 cup water.
  9. Pour this tempering on the steamed Dhoklas. Garnish with coconut and coriander leaves. Serve with green chutney.
