Traditionally, Dahi Vada is prepared by frying in oil. Soaking fried Dahi Vada in water removes excess oil. Still, if you do not prefer fried Chaat then these Dahi Vadas cooked in steam are specially for you. It gives the semolina dhokla a fabulous aroma and special flavour.
Steps to make (Non fried-Semolina(Sooji) steamed Dahi wada):
- Combine roasted semolina with all the batter ingredients except fruit salt and water or sour curd.Add the water or sour curd as required to make a smooth thick batter. Add the fruit salt and mix gently.
- Pour prepared batter, immediately into the greased small ring moulds and cook in the steamer for 7 minutes.Remove the moulds from the steamer and keep aside.
- Heat the oil for the tadka, add the mustard seeds, whole red chilli,and curry leaves and pour half of tadka over the beaten curd.Add salt and sugar to the beaten curd.
- Pour the beaten curd in a bowl. Arrange steamed semolina wadas over seasoned half of curd.Cover with remaining seasoned curd.
- Decorate steamed semolina wadas with remaining tadka, whole red chilli, chopped tomatoes diamonds,capsicum diamonds,American corn and tomatoes flowers and serve cold.
