  1. In a bowl, combine atta, salt, turmeric powder, cumin powder, green chilies, ginger, 1 tbsp; oil and 1 cup mint leaves. Knead into a soft dough with required quantity of water. Let it rest for 15-20 minutes.
  2. Divide into 4 equal portions. Roll out each portion into a circle by dusting some flour. Smear some oil over the surface and sprinkle some chopped mint leaves and flour.
  3. Fold into a semi circle and smear with oil & a sprinkle of mint leaves and flour. Fold into a triangle.
  4. And roll out. Make similar parathas with remaining dough.
  5. Heat a tawa / griddle and shallow fry the parathas one at a time by smearing some oil. Fry on both sides till light golden brown. Serve with any side dish, accompanied with onion, chilies and lemon.
