  9. Prepare 2-3 cup vegetable cooking oil
  10. Get 1 handful ready made Crispy shallot
  11. Take 2-3 dry red chilli
  12. Take 1 handful basil
Instructions to make Sweet and Sticky Crispy Cauli:
  1. Cut up cauliflower into big bite side
  2. For batter mix, add flour, cold sparkling water, salt and pepper. Mix it all but still keep some lumpy bit, no need to mix until all smooth. The batter should be single cream or gravy consistency. Add cauliflower in and mix until the batter coated cauliflower.
  3. On a medium side saucepan, add palm sugar, tamarind until all melted then add soysauce. Keep stirring the sauce until it becomes a gravy thick consistency. Turn the heat of and leave it aside.
  4. On a big saucepan, add cooking oil and wait until medium heat. Add the cauliflower in a few at the time. Cook until they golden and crisp. Take them out once cooked on a plate that lay some kitchen roll in to get rid of the oil.
  5. At the same hot oil saucepan, quick fry red dry chilli and basil for a second, take it out.
  6. Assembly time, put your crispy cauliflower into a big mixing bowl, add sweet and tamarind sauce in. Use mixing spoons mix cauliflower and sauce together then transfer to a serving plate or bowl. Top up with crispy shallots and crispy fried chillis. Enjoy
