Instructions to make Kesari Bath/Rava Kesari:
  1. In a thick bottomed pan heat ghee.
  2. Fry cashews in ghee till they become golden.
  3. Remove and keep fried cashews aside.
  4. Fry the raisins in ghee till they become plump and swell.
  5. Remove them and keep aside with the fried cashews.
  6. Now reduce flame to low and add 1 cup fine rava to the ghee.
  7. Roast till the ghee getting separated and the color of rava will also change.
  8. Heat water in a sauce pan and add 1 cup sugar.
  9. Mix well with spoon and add saffron strands.
  10. Add orange food colour and switch off the flame.
  11. Add slowly this sugar syrup in roasted rava.
  12. Mix well and add fried cashews and raisins.
  13. Add cardamom powder.
  14. Stir till the mixture releases some ghee and the rava has absorbed all the water and cooked well.
  15. Switch off the flame and cover the pan for 5 minutes just to allow the rava kesari to steam.
  16. Garnish with fried cashews and raisins and serve rava kesari hot or warm.

This easy sweet is also known as Sheera and sooji ka halwa. In Udupi rava kesari is usually prepared as one of the breakfast sweets along with main course.
