- Heat 3 cups of water in a pan and let it come to a boil. When the water comes to a boil, then add 2 tomatoes, red chilies in it.
- Boil the tomatoes on a medium flame.
- Cook them for 8-9 mins.
- Then strain the water and allow the tomatoes and red chilies to cool.
- When the tomatoes become cool, then slice off the top eye part of the tomatoes. Roughly chopped or crush them and then add in a blender along with its juices, add red chilies, garlic and salt.
- Without adding water, grind or blend to a smooth paste.
- Remove the momos chutney in a bow and serve the chutney with veg momos.
- Method for momos..
- Take the maida, salt and oil in a bowl and mix it.
- Add water in parts and begin to knead to a firm dough.
- Cover the dough and keep aside for 30 mins.
- Heat oil in a pan. Add garlic, saute it for 2-3 sec.
- Add chopped onions, saute for 10-15 sec.
- Add all the finely chopped vegetables.
- Increase the flame and saute, fry the vegetables. Saute it for 4-5 mins then add salt to it.
- Continue to saute for 2-3 mins more. Switch off the flame. Mix well. Check the taste.
- The vegetables stuffing is ready.
- Now, shaping the veg momos, divide the dough in equal parts.
- Make ball of each slice.
- Take each dough ball and on a lightly dusted board, roll each dough ball into a thin circle of about 2-3 inch diameter.
- The edges have to be thin and center have to be thick.
- Place 1-2 tbps of vegetable stuffing in the center.
- Lift one side of the edge and start pleating.
- Join all the pleats in the center.
- Prepare all momos this way and keep them covered under a moist napkin, till you are ready to steam them.
- Steaming of veg momos, grease the steamer with oil.
- Arrange the momos in the pan, keeping space between them.
- Steam veg momos in a steamer pan. You can use idlli pans or pressure cooker to steam.
- Steam it for 5 to 6 mins, when you touch the momo then dough should not feel sticky to you.
- Veg momos are ready serve them with chutney.
