Scoop the mango pulp from a well ripen mango. Grind it to make it smooth. Mango kesari or any other kesari for that matter requires good amount of ghee. Roasting the rava to the perfection in low flame is a key, I never leave the pan un-atteneded at this stage.

Steps to make Ripe Mango Rava Kesari:
  1. Make juice of ripe mango and keep aside.
  2. Now heat pan add ghee and add cashew nuts, raisin and saute till golden brown, and keep aside, in the same pan add Rava and saute in slow flame till it's colour changes and keep aside.
  3. Now in same pan add water and mango juice and mix it well
  4. When it's started to boil add sugar, salt, cardamom powder and keep stirring continuously
  5. Now pour cashew nuts, raisin and rava and mix it well.
  6. When Rava absorbs all the water switch off the flame and cover a lid for two minutes.
  7. Now take a plate and grease with little ghee and pour Rava kesari and spread with the help of a spoon.
  8. Let it cool for few minutes and cut into as per your required size and serve.

Unless the rava gets cooked completely in mango+water mixture, you shouldn't add sugar.
