- Prepare large tomato

Often called red spinach because of the earthy spinach flavor. Similar to amaranth, but has dark red leaves and light-red stems. Mix red saag curries into plain rice turning it a pretty pink color. To cook cut off the lower tough stems, then wash and chop it coarsley. teaspoon red chili powder (indian red chili powder, not regular).

- Sort the leaf from stem and wash properly as there will be soil in the leaves.
- Heat oil in a kadahi. Add cumin seeds, methi seeds, red dry chilli, aesfoetida and let it splutter. Add chopped tomatoes, salt and spinach. Mix and cook covered for 8-10 minutes on low flame. It will leave water.
- Remove lid, set the flame to medium to high and let the water dry up and mash spinach with the help of spoon. Switch off the flame and serve with roti or rice.
- Note: always try to make fresh lal saag.
