Pork cooked and roasted with chilli, spices and coconut. One of my favorite dish since my childhood days. I adapted this recipe from my grand mother. This Pork masala Fry recipe is a "must" dish at a Kerala Christian home especially in Trichur, for any special occasion.
Steps to make Kerala style Pork Fry:
- In a pressure cooker,combine pork,Chilli,corriander,turmeric,vinegar,salt,chopped onions,crushed ginger & garlic & cook till done.
- Meanwhile pulse the grated coconut in the mixie twice sothat it's evenly crushed (not a paste)
- In a nonstick pan heat 1 tsp oil & add the crushed coconut & fry.when it starts to change color,add the whole spices & Saute tillyhe coconut is well browned.keep this aside.
- Open the cooker & pour the stock to a wide nonstick pan & cook till water almost dries.
- Now add the cooked pork into this & half of the fried coconut mixture to it & cook till it starts to brown.
- Add the pepper & garamasalas & the remaining browned coconut & continue frying in medium heat till nicely browned.
Since I don't eat Pork, I don't cook it often. Like I've said before, I started cooking Pork, mainly because of the recipe requests here on MariasMenu. I got this recipe from my friend Suja chechy.
