I put in a splash of balsalmic vinegar, b/c I read that it can make the sauce pop a bit, but found it too acidic. A perfectly vine-ripened tomato is one of summer's best treats, with its ideal balance of sweetness, acidity and lightly savory notes. Reproducing that balance in a tomato sauce can be challenging since cooking brings out the acidity in tomatoes. Some cooks add sugar or other sweeteners to.
Steps to make Sweet Tomato Sauce:
- In a large stock pot drizzle a little Extra virgin olive oil and sweat the onions and the garlic
- In a blender blend the Sage,Basil and Thyme until you have a fairly smooth paste.
- Add all the ingredients to the stock pot and bring to the boil slowly while stirring
- Simmer with a lid on for about 3-4 hours stirring occasionally
- Whe simmering time has finished use a hand blender and blend to a consistency you desire
- Decant into jars or beer bottles while the sauce is still quite warm(not hot!!!). Ensure bottle or jar is sterile and heated so the glass doesn't crack!!
- Put a lid or cap on it while still warm, this should create a vacuum seal. No need to refrigerate until you open it.
Pour your finished sauce into jars. Use freezer jars if you want to freeze your sauce or canning jars if you'd like to can your sauce for shelf-stable storage. Note: To safely water-bath can tomato sauce, you must add lemon juice to boost the acidity. Tomatoes aren't as acidic as they used to be.
