Instructions to make Khara bhath:
- For making vangi bhat powder - heat a pan add 1tsp oil, add 3 red chillis, saute it, for 1 min. Take it out and keep aside. then in same pan add udad daal, chana daal, fenugreek seed, coriander seeds, poppy seeds cinnamon stick, green cardamom, and grated coconut, saute them till nice aroma start comes out, keep all them cool, grind these masala along with red chilli, make a fine powder. Our vangi bhat powder is ready.
- Take a kadai, add 2 tsp oil, add cumin seeds, mustard seeds, urad daal, chana daal, curry leaves, let them sizzle, then add 1 cup rava in it, mix well. Roast this rava on medium flame for 3 to 4 min. Keep this rava aside.
- In same kadai, add 1 tsp oil 1/2tsp add mustard seeds. Let it sizzle, then add chopped green brinjal, mix well and cook till it become soft, when brinjal cooked well then add 3 cup water, and 2.5 table spoon vangi bath powder (we made earlier.) add salt also bring it to one boil.
- Now add roasted rava in it, mix well, add chopped tomatoes, mix well and cover with lid, let it cook on slow to medium flame for 4 to 5 min. Occasionally stirring in between.
- After 5 min add 1/4 grated coconut and 1 tbs ghee, cover it again and cook another 2 min, garnish with coriander leaves. Serve hot, with coconut chutney.
