  1. Heat oil, add asafoitida, add cumin seeds and mustard seeds and curry leaves. Add onion, garlic and ginger. After roasting for a few min, add all vegetables and roast for a few min.
  2. Dry roast quinoa and keep aside.
  3. Add quinoa to the vegetable mix and give it a good stir.
  4. Mix well with the spices and cook for a few min.
  5. Add water, curd and cook in a cooker for two whistles.
  6. Add chopped coriander and serve hot with green chutney.
