  1. First grease a thali or plate using little oil. Bring 1 glass water to a boil in the steamer/dhokla maker. While it is getting ready prepare the batter.
  2. Take dry ingredients (besan, salt, sugar (2 tsp) citric acid) in a bowl. mix properly.
  3. Now make lump free batter adding required lukewarm water. (batter should be just like Idli batter)
  4. Now Heat 2 tsp oil in a fry pan. Add baking soda in batter and immediately pour hot oil. Stir it. It will start bubble up. Be quick.
  5. Pour this batter in preheated greased thali. Cover the lid. Steam it on first 5 minute on high flame. Then 10 minutes on medium flame.
  6. Check with knife. If it sticks to knife steam again for few minutes. Switch off gas. Remove thali from steamer. Let it cool down. Cut in to square pieces.
  7. Now for tempering heat oil in a pan. Add mustard seeds. It splutter add sesame seeds, 5-6 tsp water, sugar 2 tsp, green chillies. Let it boil.
  8. Now pour this tampering evenly on to Fluffy khaman.
  9. Serve with Kadhi or chutney.
