The ingredients needed to make Mango-Coconut Kulfi:
- Take 1 cup Whipping cream
- Prepare 1 cup Mango pulp
- Get 1/4 cup fresh grated Coconut
- Make ready 3 tablespoon Icing sugar or powdered Sugar
- Take 1/2 teaspoon Vanilla essence
- Prepare 2 tablespoon crushed dry fruits
Instructions to make Mango-Coconut Kulfi:
- Take 1 cup whipping cream in a big mixing bowl.
- With a hand blender whip the cream for 4-5 minutes or until it forms a soft peak.
- Take 1 cup of mango pulp or you make them by blending chopped fresh mango pieces.
- Add the mango pulp to the whipped cream together with powdered sugar.
- Whip again for 2-3 minutes.
- Add 1/4th cup grated coconut and 1/2teaspoon vanilla essence.
- Mix lightly with a blender just to incorporate coconut with the mixture.
- Chop some almonds and cashews and add to the mixture and mix. Kulfi mixture is now ready.
- Take some kulfi moulds or some small size disposable paper cups where you will set the kulfi.
- Pour kulfi mixture to each cup. I filled 7 cups with the mixture.
- Place the cups in a tray and keep inside the freezer to set.
- After 30-40 minutes, insert some ice cream sticks to the kulfis. If you want to insert them at first, you won't be able to keep them. So when the kulfis set a little bit, place them in the center of the cups.
- Again freeze them for 3-4 hours to set them completely.
- At the time of serving garnish with some dry fruit crush and grated coconut.
