Fried chicken: Start by frying bite sized pieces of chicken in a batter made with all purpose flour, corn flour and some seasoning. This batter should be thick so that it coats the chicken well.

  9. Add the sugar.
  10. Add the cooked chicken and let the mixture simmer till all the sauce is infused in the chicken.
  11. Garnish with chopped greens of spring onion.
  12. Serve chilli chicken hot as appetizer or with fried rice and noodles.

I like using boneless, skinless chicken thighs because they have more flavor and remain juicy once they are deep fried. Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside. In the same pan, add the garlic, red chilli, soy sauce, tomato purΓ©e, and water. Stir and simmer the mixture reduces and is thick and syrupy.
