Steps to make Dahi Vada Dahi Bhalla Chaat:
- Take the dals in a large bowl and wash them and soak both dals overnight and atleast for 4 hours.
- Coarsely grind the soaked daals along with green chilli, ginger, hing and salt
- Add little water if needed. The batter should be thick and dropping consistency.
- Heat oil in a wok or kadhai. Add 1 tbsp warm oil to the batter. Whisk the batter vigorously.
- To making soft vadas is to whisk the batter In one direction for atleast 5-10 minutes.
- When the oil is hot drop tbsp of batter in oil.
- Fry on medium heat until golden brown. Drain vada in a paper napkin to soak the excess oil.
- Keep a container filled with warm water ready. Now soak the vada for 5-10 minutes till double in size and become super soft.
- Now take each vada and gently press in between of yours palms to remove excess water.
- Assemble the dahi vada:- whisk the yogurt and season with sugar and some water or milk to get right consistency.
- Place the vada's in a bowl. Pour the yogurt over them. Drop the tamarind chutney and mint coriander chutney over them.
- Sprinkle the roasted cumin powder, red chilli powder. Garnish with coriander leaves, pomegranate seeds.
