- Heat 2 tbsp ghee in a heavy bottom pot and fry raisins until they swell up. Remove it to a plate and set it aside. In the same pot, add rava and fry on a low to medium heat until aromatic and crunchy. Please note that the rava does not turn brown.

- Once the rava is cooked completely and turns fluffy, add sugar which is one cup and mix it well.
- Sugar will dissolve and the entire rava kesari becomes loose again. Keep stirring and cook until the mixture thickens and the rava again becomes fluffy.
- Then sprinkle cardamom powder, and add raisins and ghee.
- Mix well and cook for 2-3mins. Then cover and rest for 2-4mins.
- You can scoop some rava kesari in a round cup. Level the top and invert the bowl. Gently shake it off.
