Heat the remaining oil in a wok or large, deep frying pan until almost smoking.   4. Pour in the rice, you may need to add a drizzle of oil to prevent it from sticking.
  5. Break up the lumps and coat really well with the tomato, onion and anchovy mixture.
  6. Add the soy sauce, kecap manis, fish sauce and stir well.
  7. Add the diced chilli 🌶 (optional of course). Stir again.
  8. Throw in the prawns and stir well. Turn down the heat low so it doesn’t burn.
  9. In a small frying pan heat it add the oil and fry the egg!
  10. That’s it your ready to serve! Garnish with cucumber and tomato, extra chilli and spring onions. I added my favourite original sriracha sauce from Sriracha! Enjoy x
