- Get 3/4 cup Warm Water
- Make ready 1/2 cup Green Peas
- Prepare 1 tsp oil
- Make ready 1 Potato
- Take 1/2 cup beans
- Get 1/2 cup carrots
- Take 2 tsp yoghurt
- Take 1 tomato Pureed
- Get 1 tsp red Chilli Powder
- Prepare 4 tsp cashew Nuts
- Prepare 1 tsp coriander powder
- Make ready 1 tsp cumin powder
- Take 1 tsp kasoori methi
- Get 1/4 cup cream
- Get 1 tsp ginger garlic paste
Steps to make Veg Pulao with Veg Kurma:
- Veg Pulao
- Wash and soak basmati rice for 30 mts.
- Heat oil add cumin seeds, whole spices, add sliced onion and cook till onion becomes translucent
- Add ginger garlic paste saute till raw smell from ginger garlic goes away.
- Add veggies, mix, sprinkle some salt, cover and cook for 3 mins. - Add green chillies, mix now add soaked rice, mix and add two cups of water.
- Add salt to taste, some dry fruits, if needed, add 2 tsp oil, mix and boil till the time water starts to evaporate from rice. - Sprinkle few splash of water, cover and simmer on low heat for 10 mins.
- After 10 mins turn off the gas heat and wait for another 10 mins to open the lid. - Garnish with Coriander and grated coconut and serve with Veg Kurma, raita and pickle!
- Veg Kurma
- Soak fried onions in warm water for 30 mins. After soaking mix yoghurt and soaked onion and grind to make smooth paste. - Make tomato puree of 1 tomato.
- Heat 2 tsp oil in a pan, add potatoes, cover and cook for a minute. Add carrot and green beans, mix, add some salt cover and cook for 2 minutes, till all vegetables are evenly cooked.
- Heat 1 tsp oil in a pan, add onion gravy and saute for a minute, add ginger garlic paste and cook for 2 mins. - Add coriander, cumin and red chilli powder, mix and cook for 2 mts.
- Add tomato puree, mix and cook for 5 to7 minutes. - Add garam masala, mix and add water and salt, sugar to taste. - Add kasoori methi, mix and add cooked vegetables, raisins, nuts, green peas, mix and cook for 5 mins
- Garnish with fresh whipping cream or grated coconut and coriander leaves. You can serve with Veg Pulao or Roti
