  19. Get 1 tsp cumin
  20. Make ready 1 onion chopped
  21. Get 1/2 capsicum chopped
  22. Get 2 tbsp fried onion
  23. Take 3 tbsp coriander leaves
  24. Make ready 7-8 cashew nuts
  25. Get 8-10 kishmish
  26. Get 1 sprig curry leaves
Instructions to make Veg Yakhni Pulao:
  1. In a non stick kadai heat 1 tbsp ghee/butter and add bay leaf, cinnamon, cloves, cardamom, cumin seeds, pepper, fennel and saute.
  2. Add in onion and add ginger garlic paste till the raw aroma disappears.
  3. Further add in boiled vegetables and saute for two minutes.
  4. Now add curd and saute low flame. Additionally add prepared veg stock 2 cups and mix well.
  5. Now add basmati rice and mix well and 2 tsp soaked Kesar in milk and mix well.
  6. Further add fried onion and cover and simmer for 20 minutes or till rice gets cooked completely.
  7. You can also pressure cook for two whistles on medium flame.
  8. Finally serve veg Yakhni pulao with curd or curries.
