Steps to make Instant Semolina/Rava Dhokla:
  1. Take semolina in a bowl. Add all the ingredients for dhokla except eno and sesame seeds. First add one cup water. It should be of thick flowing consistency. Mix everything well. If needed, add a little bit more water. Keep it to rest for 15 min.
  2. Now grease the plate for steamer. Add water to the steamer and put it on the gas. Switch on the gas and let the water heat.
  3. Now add eno to the batter and mix very well. The batter will be light and fluffy. Pour it in the greased plate. Tap the plate to make it even. Now sprinkle sesame seeds and put it in the steamer. Cover and cook for 15 - 20 min.
  4. Now to prepare tadka, heat oil. Add mustard seed. Let it crackle. Add hing and switch off the stove. Keep it aside.
  5. Now check your dhokla. If the knife comes out clean, it is done. Switch off the stove and take the plate out. Let it rest for 5 min. Cut into desired shape - square or diamond. Now pour the tadka over and sprinkle chopped coriander leaves. Serve hot with garlic or coriander chutney.
  6. Soji can also be used but you have to keep the mixture for 1 - 2 hours. Then add eno and follow the same procedure.
