  19. Get 2 tbsp Grated coconut (dry/fresh)

  24. Prepare 2 cups Coriander finely chopped

  32. Take 1/2 cup Fenugreek leaves :finely chopped
  33. Take 1 cup Gram flour
  34. Make ready 1 cup Whole wheat flour
  35. Take 1 tsp Red chilli powder
  36. Take 1 tsp Turmeric

Instructions to make Kathiyawadi Undhiyu:
  1. Method For muthiya Mix all the above ingredients well. And make small balls out of it. Heat oil and deep fry it untill it become golden brown and crispy. Drop muthiya on absorbent paper and set aside.
  2. Method of undhiyu: First of all Fry yam,suran,sweet potatoes,arbi and raw banana and all the veggies and potatoes golden brown on medium flame (except brinjal) Now take all above mention spices. Mix it well. Now semi cut brinjal horizontally and vertically. - Fill this stuffing in brinjal.
  3. Now heat oil in pressure cooker. Add mustard seeds. Let it cracker. Then add cumin seeds and pinch of asafoetida. Add all veggies. Add stuffed brinjals. Add masalas. Add muthiya. Mix it well. Pressure cook it for 6 to 8 whistle.
  4. Our undhiyu is ready. Garnish it with sev and coriander leaves. And enjoy this drolling,tasty and mouthwatering famous gujarati undhiyu with puri or fhulka rotis friends
