- Take 2 cup Oil
- Take 1 tbsp Turmeric powder
- Get 2 tbsp Red chilli powder
- Get 2 tbsp Ginger garlic and chilli paste
- Get 2 tbsp Sesame seeds
- Get 1 tsp Carom seeds (ajwain)
- Get 2 tbsp Grated coconut (dry/fresh)
- Make ready 2 tbsp Peanut powder
- Prepare to taste Salt
- Make ready 2 tbsp Coriander and cumin powder
- Make ready 3 tbsp Undhiyu masala
- Prepare 2 cups Coriander finely chopped
- Get 2 tbsp Lemon juice
- Make ready 1 tbsp Sugar
- Take 1 tsp Garam masala
- Take 1 tbsp Mustard seeds
- Take 1 tsp Cumin seeds
- Make ready 1 tsp Asafoetida
- Take For muthiya:
- Take 1/2 cup Fenugreek leaves :finely chopped
- Take 1 cup Gram flour
- Make ready 1 cup Whole wheat flour
- Take 1 tsp Red chilli powder
- Take 1 tsp Turmeric
- Make ready to taste Salt
- Make ready 1 tsp Sugar (optional)
- Make ready 1 small spoon curd
- Prepare 1 tsp Oil

Instructions to make Kathiyawadi Undhiyu:
- Method For muthiya Mix all the above ingredients well. And make small balls out of it. Heat oil and deep fry it untill it become golden brown and crispy. Drop muthiya on absorbent paper and set aside.
- Method of undhiyu: First of all Fry yam,suran,sweet potatoes,arbi and raw banana and all the veggies and potatoes golden brown on medium flame (except brinjal) Now take all above mention spices. Mix it well. Now semi cut brinjal horizontally and vertically. - Fill this stuffing in brinjal.
- Now heat oil in pressure cooker. Add mustard seeds. Let it cracker. Then add cumin seeds and pinch of asafoetida. Add all veggies. Add stuffed brinjals. Add masalas. Add muthiya. Mix it well. Pressure cook it for 6 to 8 whistle.
- Our undhiyu is ready. Garnish it with sev and coriander leaves. And enjoy this drolling,tasty and mouthwatering famous gujarati undhiyu with puri or fhulka rotis friends
