  1. Get 1 cup besan/gram flour
  2. Prepare 2-3 tbsp Oil

  6. Make ready 1 pinch Turmeric powder
  7. Take 1 tsp Green chilli finely crushed

  10. Prepare 1/2 tsp Baking soda
  11. Get 1 cup Water
  12. Get For tempering
  13. Get 1 tsp Oil
  14. Make ready 1/2 tsp mustard seeds
  15. Take 1/2 tsp Powdered Sugar
  16. Get 1-2 green Chilies finely chopped
  17. Make ready 1/4 tbsp Lemon juice
  18. Get 2 tbsp water to be poured in tempering or tadka
  19. Take As needed Curry leaves
  20. Make ready as needed Finely chopped coriander leaves
  21. Take As needed Grated coconut for garnishing
Steps to make Instant Khaman Dhokla:
  1. In a wide mixing bowl add 2 tbsp oil, powdered sugar 1and 1/2 tsp, a pinch of haldi or turmeric powder, hing 1/4 tsp, crushed green chilli and ginger paste, salt. Then squeeze the lemon juice in this bowl.
  2. Take the besan and seive it. In order to remove the lumps.
  3. Mix the ingredients in the bowl well. Now add besan to this and add water about 3/4 cup. Now with the help of whisker mix all the ingredients well without lumps. Mix it in one direction. The consistency of the batter should be flowing like dosa batter not too thick.
  4. Now allow the batter to rest for about 20 minutes. Meantime in a pressure cooker add enough water and a stand. Grease the round tin or vessel in which we will steam dhokla with oil.
  5. After the batter has rested for 20 minutes,add baking soda and some water about 3 to 4 tbsp to this batter. Quickly mix well, it will get light, fluffy and double in volume. Transfer the batter to the greased tin. Place it in the cooker above the stand. Insert the gasket inside the lid. Close the lid of the pressure cooker, do not put the whisle. Now cook it on medium flame for 20 minutes.
  6. The dhokla would have been cooked by 20min, take a knife and test. If it comes out clean then it is done. Allow it to cool.
  7. For tempering : In a small Kadai add oil. After it gets hot add mustard seeds, after it crackles, add pinch of hing, powdered sugar, curry leaves, Green chillies. Now add lemon juice and water to it. Bring it to a boil and let it cool down.
  8. Now the dhokla will be cooled a bit. We will transfer it to the plate. Add the tempering or tadka on top of dhokla. Cut it into pieces. Garnish it with coriander and grated coconut. Now serve it in a plate and enjoy fluffy and soft delicious dhokla.
