For this recipe, the older and drier the rice the better. Set out additional soy sauce on the table, if desired. Fried rice is best when it is made with cold rice. You can even cook the rice the night before.
Steps to make Fried Rice:
- Soak basmati rice for 20 min and cook rice with 1/2 teaspoon salt
- Take a big pot and heat up
- Add 2 table spoon of oil in a pot, once the oil is hot then add chopped onion sauté for 3-4 minutes on medium flame
- Add ginger garlic paste to it then add carrot, capsicum, green beans and green peas then sauté for 4-5 minutes
- Then add soy sauce and pepper powder to it sauté for 2-3 minutes and mix it well add salt as per your taste and turn off the heat, let it cool down a bit then add cooked rice to it
- Mix it really well and finally garnish with fresh coriander and spring onion and serve hot with tomato ketchup
The longer the rice sits the better it tastes! Next, I add lots of veggies to this rice. For flavor I add soy sauce and oyster sauce. I like to add Sriracha for a little kick. This recipe is a great way to work in any leftovers.
