  2. Take maida
  3. Prepare tsp baking powder

Samosa is a potato stuffed deep fried snack very popular in India, Middle East & Asian countries. They originated from the middle east and was brought to India by the Merchants. Crispy Samosa chaat is a popular Indian savory snack available in several variations. It is spicy, tangy and sweet and a popular street food in India.

Steps to make Mat Samosa or Chatai Samosa:
  1. For dough making, mix all the dry ingredients and add oil in it so that it takes the shape as is mentioned below in the second pic. Now add water as required to form a soft dough and brush some oil over the dough and cover it with a damp cloth and rest it for 30 mins.
  2. For filling, take a kadhai, add 2 to 3 tbsp oil in it, splutter sum musterd seeds. Now add curry leaves, a pinch of hing, small pieces of capsicum, onion pieces green chillies and crushed garlic a pinch of sugar and salt to taste. Fry it till it becomes golden in colour..donot fry them completely. Now add the mashed potato and green peas and cover it and cook it in a low flame till 5 to 7 mins. Now add sum corriender leaves and again give it a mix.
  3. Now remove the dough and make 3 equal balls out of the dough. Roll the dough very thin to form a square shape. Cut the sides so that it forms a rectangular shape. Now cut into 2 halves vertically. Now put the 2 pieces over one another so that it becomes a "plus" in shape. Now place the filling in between properly as shown in pic 2 and press it gently.
  4. Apply little water on the edges. Now fold from down part and another from the adjacent side. Remember donot fold the upper side. Seal the edges properly so dat it doesn't opens up. Now cut the sides into 5 equal parts as shown in the image below. And fold the strands in an alternate way. It will finally look like in the second pic. Seal all the strands with wet finger so that they doesn't opens up while frying them in oil.
  5. Now heat the oil in a pan for frying. Once the oil is hot lower it and fry them till golden brown and crispy. Fry them min. till 5 to 7 mins in a low flame and you are ready to serve. Serve it with any dip or sauce of your choice

Samosa Chaat is served by adding a plate full of peas or chole masala, mashed samosa with freshly cut veggie toppings and a dash of lemon goodness. To make meat samosas, start by heating oil in a large frying pan over medium heat and fry the onions. Add a combination of minced lamb, beef, and chicken to the pan until it's fully browned. Once it is completely cooked and has cooled, pour the meat mixture into a cone. Seal the edges carefully using a little water. (You can also make paste using flour and water for easier sealing).
