Steps to make Ragi Chocolate Cake:
- In a wide bowl add curd and jaggery. Mix well with whisker until jaggery gets dissolved.
- Now place a seiver above the same bowl and add Ragi flour, fine sooji, cocoa powder and 1 tsp of baking powder. This seived flour is now added in curd and jaggery mixture. Mix it well in one direction without lumps.
- Add coarsely ground dry fruits of your choice to this mixture. Mix well. Add oil to this and prepare a lump free batter.
- Take half cup milk and add it little by little to this batter. Mix well with the help of whisker. Add a tsp of vanilla essence and mix well. Here about 2 tbsp milk is left. Allow this batter to rest for 20 minutes.
- While the batter is allowed to rest that time, In a pressure cooker add salt. Place a plate and stand above it. Cover it with lid, without gasket and whistle. Pre heat this for 10 to 15 minutes.
- After 20 minutes as we have added sooji the batter will become little thick. Add ghee, 1/2 tsp baking soda and 1 tbsp milk.Whisk it and check the batter consistency. It should be thick but of flowing consistency.
- Pour this prepared batter in a greased cake mould. Garnish it with dry fruits. I have added chopped cashews and almonds. Place this carefully inside the preheated cooker.
- Cover and bake for 45 to 50 minutes on low flame.After 45 minutes check it by piercing knife inside it. If it comes out clean then the cake is baked.
