Steps to make Mukimo:
  1. Peel the potatoes and place in a large pan of hot water and add salt…
  2. When about to cook… The last ten minutes add the beans and githeri…take off heat and drain the excess water and mash till the desired texture… Add the margarine and mix evenly
  3. In a preheated saucepan, add oil and cook the onions till translucent andtake off heat.. And add to the mukimo and mix in evenly
  4. Serve with stew of your choice and enjoy
