Steps to make Braided Samosas:
  1. Take maida in a bowl, add some ajwain, salt, 3 tsp of oil and knead it into a stiff dough. Cover it with a damp cloth and keep it aside for about half an hour.
  2. Now for the filling, you can add any aloo filling of your choice. But for my filling, heat a pan. Add 2 tsp oil in it, add some mustard seeds, curry leaves, green chilli & chopped onion, chopped capsicum into it and fry it for some time. Now add the boiled, mashed potatoes and give it a mix and cook it for about 5 mins. Add half tsp chaat masala/ jaljeera powder, add some coriander leaves & give it a mix. Keep it aside.
  3. Now take the dough. Again Knead it for about 5 mins. Make 3 balls out of it. Roll it into a very thin chapati and cut into rectangular shape as in pic 1.
  4. Now make the designs as shown in the pics. Place the filling and seal it with water. Now roll it. It will form the shape as shown in image 3. Seal it properly. Make the remaining one in the same way.
  5. Now heat oil in a kadhai and fry them in a low flame to make them crispy. Serve hot with ketchup or as it is.

For the samosas: Place the potatoes in a pot with cold water to cover. Drain and let cool a bit. Samosas are a perfect tea time snack specially when guests come over for tea. However, considering that samosas are deep fried, I am usually not too keen on getting samosas very often.
