- Prepare 1/4 cup Coconut
- Prepare 1 tbsp Coriander Seeds
- Prepare 5-6 Dry Red Chillies

- Take 1 tbsp Sesame oil
- Take 1/4 tsp Turmeric
- Take 1/2 tsp Kashmiri Red Chilli Powder
- Prepare 1/2 tsp Garam Masala Powder
- Get Salt as required
I love eggs in any form. They are one of the versatile ingredients to have around because you can whip up I make curries with it often to go along with roti or appam or whatever. This egg curry is suitable for chettinad kara paniyaram , idli/dosa and also for chapathi. if having it for rice, then you just have to do slight adjustment. lastly, add fresh coconut paste to this and give it a boil. I like the egg to be cooked along with the gray rather than boiling and adding it separately to the gravy.
Steps to make Chettinad egg curry:
- Heat a khadai and roast the whole spices and coconut until browned. (Ingredients 1-15)
- Boil the eggs for 8-10 minutes. Cool and grind the masala to a fine paste.
- Heat the same wok with a tsp of oil. Remove the shell from eggs and add it to the wok. Sprinkle turmeric, salt and chilli powder. Fry for 1-2 minutes and take out. Now again in the same wok add oil and splutter mustered and curry leaves. Add ground onion paste and fry until golden brown. Add all the spice powders, tomatoes pureed and saute until oil oozes out. Then add the ground paste and mix well.
- Add the eggs and half cup of water. Mix and cover with a lid. Allow to boil for 5 minutes. Done. Garnish with coriander leaves and serve hot. 😋
