  18. Make ready 1 tbsp Kewada assence
  19. Make ready 7-8 Kesar soaked in milk
Instructions to make Chicken Biryani:
  1. Wash off the chicken.In a bowl add chicken,salt,garam masala powder, ginger garlic paste,saltTurmeric powder, coriander powder, 4 tsp oil,chicken masala powder,chilli powder, chopped green chillies,hung curd.leave it for 2 hours.
  2. Meanwhile,boil 1 litre of water in the handi and add mint leaves,3 tsp ghee and a pinch salt.boil it till it is half cooked.Strain the water from rice.save that water.we have to use that.
  3. Now,heat the oil in the Handi and add cumin seeds,bay leaves.Now,add marinated chicken.Fry it for 10 minutes.Now,take out half of the chicken because we have make layer.
  4. Now, above the one chicken layer spread the cooked rice and fried onions,ghee.Again spread the chicken pieces and again do the same process.and spread fried onions, mint leaves, coriander leaves,drop 4 drops of kewda and kesar assence.at last,spread the ghee,water and soaked kesar with milk.Cover the biryani with lid using dough and cook it on lower flame for 1 hour. Serve it raita and egg curry.
