  1. Prepare sooji (semolina)
  2. Make ready mixed veggies, chopped
  3. Get oil
  4. Get mustard seeds
  5. Prepare onion, chopped
  6. Prepare ginger, grated
  7. Prepare curry leaves
  8. Take green chilies, chopped or slit
  9. Take urad dal (split black gram)
  10. Make ready chana dal (Bengal gram)
  11. Prepare peanuts, roasted

  13. Prepare coriander leaves & nalla karam podi / idli podi
Instructions to make Vegetable Upma:
  1. Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the urad dal, chana dal and curry leaves. Then add the onion, ginger and green chilies. Saute till light brown.
  2. Add the chopped veggies and saute for a minute. Now add the sooji and fry till light brown in colour. Add salt, 2 cups water and the roasted peanuts.
  3. Simmer on low flame till it becomes thick. Switch off the flame. Transfer to a serving dish. Serve, garnished with coriander leaves and a sprinkle of some podi (gunpowder).
