Suran Ki Sabzi- Suran/Yam/Jimikand/Elephant foot yam - is an edible tube, but is different from sweet potato, though people often confuse between the two.   1. First wash Suran,peel it and cut it into pieces then take oil in kadai and fry the Suran until it becomes golden brown.
  2. Now make a paste of onions, tomatoes and green chillies in mixer grinder. Now take oil in another kadai and put jeera, ginger,garlic and onion, tomatoes,green chillies paste into it.
  3. Now let the paste became brown,when paste became brown then put haldi,dhania and red chilli powder into it
  4. Now mix it well
  5. Now put the fried Suran into it and put 2 cups of water, garam masala and salt acc. To taste.
  6. Now cover the kadai with plate and cook it for 10 minutes.
  7. Suran (elephant yum) ki sabzi is ready to serve,garnish with green coriander. And serve with rice and chapatis.

Suran/Yam/Jimikand/Elephant foot yam /oal/ol/ole is an edible tuber and is totally different from tapioca and sweet potato, though people often confuse between the three. Suran is called Elephant foot yam in English. It is also known as 'Jimikand'.
