  7. Prepare 1/2 tsp turmeric powder

  11. Take 2-3 green chilli,vertically cut
  12. Prepare 1 cup coriander leaves
  13. Get 10-12 mint leaves
  14. Take 1/4 tsp green cardamom powder
  15. Take 1 tbsp oil
  16. Take 1 tsp lemon extracted juice
  17. Prepare As required Salt
  18. Prepare For rice-:
  19. Take 2 1/2 cup basmati rice

  22. Get 2 bay leaves
  23. Make ready 4-5 laung/cloves
  24. Make ready 4 small cinnamon stick
  25. Take 2 cardamoms
  26. Get 8-10 black pepper
  27. Get 1 tsp jeera
  28. Make ready 1 tbsp Kewda jal
  29. Take 1 tbsp desi ghee
  30. Prepare As required Salt
  31. Make ready For garnishing-:
  32. Prepare 1/2 cup coriander leaves
  33. Get 1/4 pudina/mint leaves

Instructions to make Chicken Dum Biryani:
  1. Collect all ingredients with chicken,rice and food colors.
  2. Take a kadhai,add oil and fry onion until dark brown in colour,wait cool it and crushed the onion.
  3. Take a bowl,add all spices,leaves,salt,chillies,ginger-garlic paste and mix well.
  4. Now add curd, lemon juice, green cardamom powder and oil,mix the merinade well. Chicken marinate is mix well. Marinate for 30 mins.
  5. Soak 2½ cup of basmati rice for 30 mins. Add good amount of water in the handi, add salt as taste, whole garam masala, 1tsp shahi jeera,1tsp oil. Bring the water to a boil,add in soaked basmati rice,give a mix. Cook the rice until it is 70% done. Strain the rice.
  6. Dum procedure-: Take a flat bottom handi,add some oil all over the base, add the chicken marinade,spread it evenly. Add rice all over the marinade. ¼ tsp add cardamom powder, fried onion, 1tbsp lemon ectract, 8 to 10 mint leaves,coriander leaves, 1tbsp onion flavored oil(oil remained after frying onions), 1tsp ghee, add yellow and red colour. Cover the lid.
  7. Dum the biryani on high flame for 10min. Dum on low flame for 25 to 30 mins. Biryani is done. Serve the biryani,chicken biryani is ready.
