Instructions to make Lauki Dudhi muthiya:
  1. Squeeze out the water from grated lauki and keep aside.
  2. Take all flours in a mixing bowl. Add haldi, salt, chilli ginger paste, finely chopped coriander leaves, soda, sugar and oil. Add grated lauki.
  3. Mix all ingredients together well. Add water if required. Make a soft dough. Cover and keep it aside for 15 minutes.
  4. Apply oil to your hand. Make a long round rolls from the dough.
  5. Steam the muthiya for 30 minutes. Now put the fork inside the muthiya and check whether it is cooked. If the fork comes out clean then muthiya is ready.
  6. Turn off the gas. Let it cool down. Now cut into a thick pieces.
  7. Heat the oil in a pan. Add mustard, cumin seeds, hing, sesame seeds and curry leaves.
  8. Then add salt, lemon juice, chat masala and muthiya. Mix well. Cook for 5 to 10 minutes.
  9. Muthiya is ready to serve. Serve with sauce or pudina chutney.
