- First in a bowl take 100 gms flour and 1tspn baking powder and baking soda mix it and keep it aside. Now in a mixing bowl take 3 eggs and add 1 tbsp of vanilla extract and whisk well until doubles in volume. Then add powdered sugar in it and beat well to mix properly. After that add the dry ingredients gradually and give it a good mix. Then add oil and 2 drops of blue food colour into it and mix until everything blends perfectly. Now take a cake mold and grease it with butter.
- Then pour the batter into it and tap the cake mold to remove the air bubbles. After that bake it in a 180 degree preheated oven. Once the cake is ready leave it to cool down. In the mean while whisk the whipped cream and beat until gets fluffy. Then cut the cake into 2 sheets add sugar syrup and blue berry crush and decorate it with the whipped cream. Refrigerate for 2 hours and then serve as a dessert.
