  1. Finely chop the mushrooms and soak them in cold milk to prevent them from turning dark
  2. Add peas to this mix  along with semolina and give it a nice mix till semolina is uniformly coating the peas and mushroom.
  3. Add salt and pepper and mix well
  4. Now add wheat flour and gram flour and give whole mix a nice stir till a smooth consistency mixture is formed.
  5. Unlike other pancakes recipes, don't add too much water to make it flowy as mushrooms will give out water, hence a relatively thick batter is to be made.
  6. Let the mixture rest for 10 minutes.
  7. Heat some oil on a non stick griddle and spread it evenly across the whole surface.
  8. Pour the batter in the centre and slowly spread it over with a spatula.
  9. Cover the mixture and let it cook on medium flame.
  10. Flip the side and let it cook similarly. Gently press the pancake on the top with spatula/ masher to thin out the pan cake.Kindly note, before you start flattening, make sure both sides are crisp, else the water that will ooze out while pressing will break the pancake. BE VERY GENTLE
  11. Serve hot with Yogurt/ Creamed Cottage Cheese.
