  1. Take 1and1/2 cup Basmati rise (10-15mins soak)
  2. Make ready 2 tbsp Oil
  3. Take 3 tbsp Butter /ghee
  4. Take 2 Onions - medium (sliced fry)
  5. Take 1 Onion- medium(small chopped)
  6. Get 3 Tomatoes puree - pieces
  7. Make ready 2tsp Ginger or garlic paste
  8. Prepare 2 Chopped Carrots-medium size
  9. Get 1 Chopped capsicum- medium size
  10. Make ready 8-10 Chopped French beans pieces
  11. Make ready 1 Cauliflower(gobi) - small flower (cut small pics)
  12. Prepare 1/2 cup peas / mattar
  13. Prepare 1 cup Paneer - (cut small Cubed then fry)
  14. Take 1 cup curd / yogurt-
  15. Make ready 4/6 cloves / lavang
  16. Take 1 Black elaichi / cardamom
  17. Prepare 2/3 Green elaichi / cardamom
  18. Prepare 2 Tej patta / bay leaves
  19. Make ready 1inch Dalchini / cinnamon
  20. Take 4/5 Black pepper
  21. Prepare 1/2 tsp turmeric / haldi
  22. Prepare 1 tsp cumin seeds / jeera
  23. Get 2 tsp Biryani masala
  24. Make ready 1 tsp Garam masala
  25. Take To taste Salt
Instructions to make Handi Veg Biryani:
  1. Soak basmati rice for 10 to 15 min.and cook with haldi and lavang until it is done, drain and keep aside.. Cut the all vegetables and keep aside.heat 3 tsp oil a pan then deep fry paneer cubes and 2 onions sliced till golden brown and keep aside.
  2. Again Heat 2 tbs oil in a thick pan/ kadai and add jeera, tej patta, black pepper,black elaichi, green elaichi, dalchini and lavang(2) then add chopped onion,add ginger garlic paste till golden brown.add tomatoes puree and cook till oil separates.add all chopped the vegetables cook half fry than add fry paneer or onions and add curd.. last is add biryani masala, garam masala salt..
  3. Grease the pan/handi,place alternate layers of rice and half fried vegetables and also spread butter/ghee in between the layers and on the top.
  4. Cover the pan/ handi with a lid, seal the side with thick dough and wrap it with an aluminum foil.cook it on low flame for 12-15 mins.open the lid, and ready handi veg biryani..
  5. Serve hot with curd…
