The ingredients needed to make Sabudana Vada:
  1. Make ready 1 Cup Sabudana/sago
  2. Get 2 Large Potatoes, boiled and peeled
  3. Prepare 1/2 Cup roasted Peanuts, slightly crushed
  4. Take 1 Inch ginger Grated
  5. Take 1 tsp Cumin Seeds/ jeera
  6. Get 3-4 Green chilies, chopped
  7. Take Handful Fresh coriander leaves
  8. Take Handful curry leaves, chopped
  9. Take 2 tsp sour curd
  10. Take 1/4 tsp black salt
  11. Take to taste Salt
  12. Take As required Oil, for deep frying
Instructions to make Sabudana Vada:
  1. Rinse the sabudana under cold water and soak it in water overnight
  2. In a mixing bowl add ginger, jeera, mashed potatoes and peanuts.
  3. Now add sour curd, green chillies, coriander and curry leaves, black salt and salt. Mix well
  4. Drain the sabudana and combine with potato mixture. Mix.
  5. Divide in to equal portions. Roll each one into ball and shape it into a vada
  6. Heat oil in a Kadai for frying. Deep fry the vadas in oil till nice golden brown.
