  3. Prepare 1 cup pumpkin inside flesh

  5. Make ready 1 medium-sized bulb onion
  6. Make ready 2 tbs cooking oil
  7. Take to taste Salt
  8. Get 1 tsp garlic paste
  9. Get 1 tsp ginger paste

  1. Remove maize from their kernels.
  2. Remove any foreign material from the beans and mix the maize and beans.Wash clean.
  3. Soak the githeri mixture for about two hours.
  4. Boil using pressure cooker for 20 minutes.
  5. Meanwhile shred the Onion, tomatoes and pumpkin insides separately.
  6. Once the githeri is cooked, fry the onions until pale. Add ginger and garlic pastes. Add the pumpkin insides and cook till tender.Add tomatoes and cook for 3 minutes.
  7. Add the githeri and stir to mix with the tomato mixture. Cook for about 5 minutes while checking to avoid burning to allow the tomatoes to seep into the githeri.
  8. Add water and simmer for 10 minutes. Check occasionally to avoid burning.
  9. Garnish with boiled eggs and serve immediately.
