  5. Reduce the heat to the lowest possible and continue to cook for 10 mins, stirring every 2 mins or so.
  6. Once the strawberries are nice and soft, use the back of a spoon to mulch them down. Continue to do this for 3-5 mins, until the consistency of the coulis is as thick as you like it.
  7. Remove from the heat. If you want a completely smooth coulis you can sieve it (using a metal sieve so it doesnโ€™t melt). Iโ€™ve left mine with some chunks in it. Once cooled, leave in an airtight container - it will easily last for 5 days. It can also be frozen. Enjoy!
