Medu vada or vadai is a traditional favourite of South India that features not just in everyday cuisine. Upma or Uppuma or Uppittu is a common South Indian and Sri Lankan Tamil breakfast dish, cooked as a thick porridge from dry roasted semolina or coarse rice flour. Various seasonings and/or vegetables are often added during the cooking, depending on individual preferences.. Steps to make Upma vada:
  1. For upma : To prepare the upma, heat oil in a kadai and add cumin seeds, mustard seeds, curry leaves. Let them splutter then add the chopped green chillies, grated ginger, chopped onions, tomatoes and saute well.
  2. Add the salt, ginger garlic paste and saute for few seconds. Then add the water. Allow it to get a boil. Meanwhile roast the sooji or rava in ghee. When the water gets boiled add this roasted sooji into it by continously mixing so that no lumps are formed. Cover the lid and let it cook till the water evaporates.
  3. For Vada: Take one cup of the prepared upma when completely cooled. Add rice flour, salt to it and knead into soft dough. Rice flour quantity can be adjusted depending on the softness of dough. From the dough make lemon sized balls and flatten them using palms and make a hole in between it to get vada shape.
  4. Heat oil in a kadai and deep fry the vada's on medium flame till they turn golden brown and crispy. Serve warm with tomato sauce.

Gram here means different kinds of pulses. Rava upma (suji ka upma) is one of the most popular South Indian breakfast/dinner recipes. It's a bachelor friendly dish as it is fast to cook and easy to make. Rava upma is my fav and I wouldnt complain at all even if its served daily…I like both wheat and white rava recipes….
