  36. Make ready 1 tbsp Maize flour
  37. Take 1/2 tsp turmeric powder
  38. Prepare As per taste Salt

  40. Prepare 1/4 cup dhokla batter
  41. Prepare For orange colour:
  42. Prepare 1 grated carŕot's juice
  43. Get 1 tomatoes pulp
  44. Make ready 1 tbsp Schezwan Sauce
  45. Make ready 3/4 - cup dhokla batter
  46. Make ready Pinch baking soda
  47. Prepare For red colour:-
  48. Get 1 tbsp beetroot juice
  49. Get Pinch baking soda
  50. Take 3/4 cup dhokla batter

  52. Take 2 boiled & smashed potatoes
  53. Make ready As per taste Salt
  54. Prepare 2 tsp thick fresh curd
  55. Prepare 1 tbsp green Chutney
  56. Get 1 tbsp Schezwan Sauce
  57. Take 1 tbsp sweet corn
  58. Prepare 1 Tomato flower for garnishing
  59. Prepare For tempering:-
  60. Get 1 tbsp oil
  61. Take 1 tsp cumin
  62. Prepare 1 tsp mustard
  63. Prepare 1 tsp white sesame seeds
  64. Get 1 green chilli chopped
  65. Prepare 6-8 curry leaves
  66. Make ready 1/4 tsp asafoetida
Instructions to make Rainbow Dhokla:
  1. First grind 10 hrs. Soaked rice, dals & fenugreek in mixer grinder with sour curd, and keep it for fermentation.
  2. Add salt,garlic, ginger,green chilli, sugar,oil,asafoetida and mix well.
  3. For green colour grind all the ingredients in mixer grinder and make green puree. For yellow colour also grind in mixer grinder. For orange colour mix parrot's juice, tomato pulp and Schezwan Sauce. For violet colour black grapes compote. For red colour Beetroot's juice. For Indigo blue colour + Beetroot juice. For blue colour 10- drops food blue colour.
  4. Now mix all the seven colours one by one separately with dhokla batter and add baking soda and mix well.
  5. Preheat water for steam, meanwhile grease heart shaped mould and line with butter paper so that it will be easy to unmould. First pour violet colour batter spread properly cover with lid and cook for 5-7 minutes then on top pour indigo colour batter. Similarly one by one steam all batters. It will take 1- hour to cook completely.
  6. Unmould on plate, remove butter paper and prepare for icing, add curd,salt in smashed potatoes & divide in two parts in one part add green Chutney and in 2nd part add Schezwan Sauce fill two separate stat nozzles piping bag.
  7. Make alternate red and green stars and press sweet corn in center. Garnish middle portion with tempering and tomato flower.
  8. So Colourful Yummy Rainbow Dhokla is Ready to serve.
